Published on Main keeps a walk-in counter in front of its starred kitchen, and the city behind it runs deep in no-booking rooms, from a Chinatown institution that has never fully taken reservations to a Railtown pasta bar built for the same. Chef Gus Stieffenhofer-Brandson took a Michelin star in 2022 and has held it since, after the room topped Canada's 100 Best that year. Bar plates run roughly $20 to $40. 2.Vij's

Vikram Vij's room, famously first-come since 1994, lamb popsicles in fenugreek cream. The walk-in worth the wait.

Vij's has run on a mostly first-come basis since Vikram Vij and Meeru Dhalwala opened it in 1994, now at 3106 Cambie Street in Cambie Village. A limited number of tables have been reservable through Tock since 2018, but the room is still built for the walk-in, and the evening line is part of it. The dish is the wine-marinated lamb popsicles in fenugreek cream curry, around $32. It holds a Michelin Bib Gourmand from the 2022 guide. Arrive early, put your name down, and have a drink while you wait.

3.Phnom Penh

Cambodian-Vietnamese · Chinatown · No reservations · Michelin recommended

The Huynh family's Chinatown institution, butter beef and pepper wings, no bookings. Line up for the best-value walk-in in town.

Phnom Penh has been a Chinatown institution since the Huynh family opened it in 1985, at 244 East Georgia Street, and it takes no reservations for tables under six. The marinated butter beef at about $26 and the deep-fried chicken wings, around $12 to $17, are what the line is for. The Michelin guide has recommended it since the 2022 Vancouver edition. Waits can reach a couple of hours at peak, so go early or off-peak. This is the best-value walk-in in the city and worth the queue every time.

4.Bao Bei

Joël Watanabe's Chinatown brasserie holds the whole bar for walk-ins, shao bing the order. A reliable no-booking night out.

Bao Bei at 163 Keefer Street is Joël Watanabe's Chinese brasserie, which keeps the entire bar, the high-tops and a few dining tables for walk-ins, taking bookings only for its large family table. The shao bing, a cumin lamb-sirloin sesame flatbread, is the signature, with dinner around $70 to $80 a head. It has been Michelin-recommended since the 2022 guide and marked fifteen years in 2025. If the bar is full they will text when a table opens, so leave your number and have a drink nearby. It is the most reliable walk-in of the Chinatown rooms.

5.Anh and Chi

The Nguyen family's Main Street room holds most seats for walk-ins, the vermicelli bowl the order. A welcoming, no-booking dinner.

Anh and Chi at 3388 Main Street in Mount Pleasant holds most of its seating for walk-ins, first-come and openly encouraged, releasing only a few by-donation bookings a day. Run by Vincent and Amelie Nguyen with executive chef Ly Nguyen, it builds its menu around a signature vermicelli bowl with grilled prawn and crispy pork spring rolls, and a pho around $24. It carries a Michelin Bib Gourmand from the 2022 guide, with a family lineage going back to Pho Hoang in 1994. Put your name down and wait with a drink at the bar.

6.Ask for Luigi

Ask for Luigi at 305 Alexander Street in Railtown is J-C Poirier's no-reservations pasta room, with most of every service kept for walk-ins, who are openly welcomed. The crispy bucatini is the signature, alongside a daily-changing set of house-made pastas, mains in the mid-$20s to low-$30s. Poirier, who also runs the Michelin-starred St. Lawrence nearby, opened it in 2013, and the guide has recommended it since 2022. Lunch and weekend brunch are the easier walk-ins; for dinner, go early. This is the room for fresh pasta without a booking.

St. Lawrence and Kissa Tanto are two of the city's best tables, but both run on reservations, and Kissa Tanto's bar seats are booked through Tock rather than held for walk-ins.
