The kitchen runs four distinct cooking lines — Japanese (sushi, sashimi, robata), Thai, Chinese, and Indonesian — under a single executive chef who trained across Bangkok, Singapore, and Tokyo. The dining room is a two-storey teak-and-stone pavilion overlooking the Miramar pool and the Gulf of Oman. Capacity is about 120 across an indoor dining hall, an outdoor terrace, a sushi counter for eight, and a private dining room for twelve. Signatures include the Wagyu sushi roll, the Phuket-style whole steamed sea bass, the Peking duck service (available by 24-hour advance order), and a chef's tasting menu that rotates monthly.
The wine list is deep for a Fujairah resort — Bordeaux, Burgundy, a strong Californian sleeve, and a full Japanese sake programme. Sommelier-led pairings are available for groups of four or more.
