The Verdict
Molle operates as an invitation-restricted omakase counter in a residential tower in Marine City, not far from Park Hyatt Busan. The room seats only eight, arranged in a single row facing the itamae and the refrigerated case. The fish runs direct from Busan's Gijang fish market (Korea's best uni source) and the Jagalchi market, supplemented by imports from Toyosu for the classical Japanese fish — otoro, sujiko, hokkigai — the local market does not supply.
The omakase sequence — approximately 18 courses — opens with small appetisers (chawanmushi with Gijang uni, seared kinmedai, ankimo), moves through a tsumami sequence of hot and cold preparations, and climaxes in a 10-to-12-piece nigiri progression. The rice is cured with Akazu (red vinegar) and tends toward warmer and slightly firmer than Tokyo norm — a choice that suits the itamae's preference for stronger-flavoured fish.
Pricing runs KRW 280,000–380,000 per person depending on the seasonal fish selection. The sake program is deep — 40-plus labels — with generous by-the-glass pricing. Reservations require a phone call (the restaurant does not take online bookings) and are usually confirmed three weeks ahead for weekend seatings. Single seatings per night: 6pm or 8:30pm, Tuesday to Sunday.
Why It Works for Solo Dining
An omakase counter in Busan is a calibrated statement: it signals that you respect Korean-Japanese food diplomacy and you value the itamae's focus. The eight-seat room is small enough that serious conversation runs quietly; the 90-minute sequence structures the dinner efficiently. Ideal for two or three-person business dinners; less effective for groups.
