The Verdict
Fiorentina occupies the 30th floor of Park Hyatt Busan in Haeundae's Marine City district — the tallest luxury hotel on the Korean coast, built in a glass curtain-wall tower at the tip of the U-dong waterfront. The dining room is a single open space with floor-to-ceiling windows on three sides: Haeundae Beach to the north, Gwangalli Bridge to the south, and Marine City's residential towers framing the east. At night, the view is the restaurant's defining feature.
The kitchen is contemporary Italian in a global luxury-hotel register — fresh handmade pasta (the bottarga linguine and the uni capellini are the signatures), dry-aged hanwoo ribeye bistecca alla Fiorentina (the restaurant's eponymous dish), Sicilian-accented seafood, and a pastry program that does the classical repertoire very well. Ingredients are imported Italian where it matters (burrata, olive oil, certain seafoods) and local Korean for the hanwoo, seasonal vegetables, and certain fish.
Expect KRW 200,000–280,000 per person at dinner with moderate wine; the tasting menu is KRW 220,000. The wine list is among the longest in Busan with strong Italian representation. Request a window table specifically — the restaurant has two tiers of tables and only the outer ring has the view. Dinner starts at 5:30pm, peaks at 7–8:30pm, and runs until 10:30pm. Sunday brunch is the secret alternative entry.
Why It Works for Proposal
The window table at Fiorentina, looking east across Marine City's skyline and south toward Gwangalli Bridge, is Busan's most cinematic dining view. Korean business entertaining typically avoids the kind of over-the-top romantic framing a view like this projects — which makes it, paradoxically, an excellent close-a-deal room for international clients who expect luxury to look like luxury.
