The Room

Initiale opened in 1989 on rue Saint-Pierre in Old Quebec's Lower Town. Yvan Lebrun runs the kitchen with wife Rolande Leclerc in the dining room; together they have held the fine-dining anchor designation for over thirty-five years.

The dining room seats 50 across two rooms. Service is brigade-French, formal and warm.

The Food

The five- and seven-course tasting menus rotate seasonally. Wine programme is French with serious Burgundy and Bordeaux benches.
