Seven Seas at Pimalai

Seven Seas is the signature fine-dining room at Pimalai Resort & Spa — the only serious luxury property on Koh Lanta and the reason the island carries any fine-dining conversation at all. The restaurant sits sixty metres above sea level, cantilevered out over the hillside so that two of its three walls are glass and the view is nothing but the Andaman, the bay, and at night the running lights of longtail boats crossing the channel.

The cooking is European — French-technique-led, with a Southeast Asian ingredient layer that the chef has developed since the restaurant's opening. Expect langoustine with yuzu and kaffir lime, foie gras with palm sugar, Wagyu with black garlic, and a dessert course that works its way through coconut, galangal, and tropical citrus. The tasting menu runs six courses; the à la carte is generous.

The room itself is unhurried — perhaps fifteen tables, widely spaced, dim lighting, a sommelier who works every cover personally. The wine list is one of the better-kept secrets of the Andaman Coast: serious Burgundy, Piedmont, Rhône, and a handful of verticals from New World producers. Reservations genuinely matter here — in high season, the restaurant runs full every night.

For a proposal, the cantilevered corner tables at the western end of the room get the full sunset-over-the-bay view; request specifically at booking. Pimalai's team will coordinate ring-bearer, flowers, photographer, and a private transfer afterwards without extra conversation.
