Spice N' Rice is Pimalai's Thai restaurant — separate from Seven Seas, sitting lower down the hill closer to the pool deck, and widely cited by Thailand guide-books as the best Thai room on Koh Lanta. The kitchen is Southern Thai specialist — the curries that run hotter, more turmeric-heavy and shrimp-paste-forward than the central-plains Bangkok style.
The menu is long by Thai-resort standards. Dried fish with watermelon is the signature starter — a dish that sounds improbable on the page and is a revelation on the plate. Braised Wagyu massaman curry, green chicken curry with roti, gaeng som with prawns, and a tom kha gai with liang leaves (a wild Southern green that never appears on tourist-menu versions) all deserve order.
The dining room is open on three sides to the gardens. Twenty-five tables, warm uplighting, a small wine list, and a full Thai cocktail program. Service is smiling and informed; the staff will walk you through the regional notes on the menu if you ask.
For a business dinner, Spice N' Rice is the easier of Pimalai's two rooms to hold a conversation in — Seven Seas whispers, this room runs at a lively murmur. The shared format (multiple curries on the table) encourages the meal to stretch.
