Bajan Blue at Sandy Lane Hotel is the institutional all-day dining flagship of Sandy Lane. The canonical Caribbean luxury hotel, opened in 1961 by industrialist Sir Anthony Sykes and reopened in 2001 after a complete reconstruction by the Tom Burgess and Pier Luigi Pizzi architectural team. And is one of the most internationally recognised Caribbean luxury hotel restaurants.
The cuisine is contemporary Asian-European-Seafood. The all-day programme features Asian, European, and seafood cuisine from a breathtaking waterside setting. Signatures include a Caribbean-lobster cocktail; a slow-cooked Caribbean snapper with samphire; a hand-rolled Asian-Caribbean dim-sum platter; a wood-fired European-style Caribbean turbot; the famous 'Sandy Lane Sunday brunch' (the canonical Sunday brunch in the Caribbean) and 'spectacular themed buffet evenings'.
The wine list runs to 700 references with deep French Champagne, Burgundy, and Bordeaux coverage.
The dining room and beachfront terrace together hold a hundred and twenty covers.
