About Daphne's

Daphne's Barbados is the Caribbean sister of the celebrated Daphne's London. The Italian fine-dining institution that the Mosimann's family ran in Chelsea since the 1980s. Opened in Paynes Bay, Saint James, on the canonical West Coast luxury beach. The restaurant runs a Tuscan-Caribbean fusion programme.

The cuisine is contemporary Italian with Caribbean ingredient sourcing. Signatures include a hand-rolled tagliolino with Caribbean lobster; a slow-cooked Caribbean goat ragu; a wood-fired Caribbean snapper; a hand-cut Caribbean tuna tartare; the famous 'tiramisù Daphne's' for the dessert course.

The wine list runs to 400 references with deep Italian and French Champagne coverage.
