The city's actual rooftops sit along the Promenade des Anglais and above the centre, and for years they traded on the Baie des Anges panorama while serving forgettable hotel food. Taulissa crowns the Maison Albar Le Victoria in central Nice and is the reason the city's rooftop conversation changed. The menu is signed by Glenn Viel, the three-Michelin-star chef of L'Oustau de Baumaniere, working with chef Fred Grava, and it runs to generous, sauce-led Provencal sharing plates rather than fussy tasting theatre. The 360-degree terrace takes in the rooftops, the hills and a slice of the Mediterranean. SEEN by Olivier sits on the sixth floor of the Anantara Plaza, the former Boscolo, off the Jardin Albert 1er, with a 360-degree sweep over the centre and the sea. It is the Nice outpost of restaurateur Olivier da Costa's SEEN brand, and the kitchen blends refined Mediterranean cooking with an Asian streak, from deluxe sushi to wagyu picanha and a truffled lobster salad. Le Plongeoir. The most romantic high table in Nice, but it is not a rooftop: it stands on an old diving platform on a rock over the sea east of the port. Go for the setting and the sunset, just do not expect a roof terrace.

Rooftop 17 at Hotel Monsigny. A pretty seventh-floor perch with a whirlpool, sofas and fairy lights, but the kitchen stops at finger food to share. Fine for a cocktail at dusk, not for dinner; eat first and come up for the view.

How to book a Nice rooftop

Nice has more genuine rooftops than most Riviera cities, and The Rooftop Guide counts fifteen, but they split sharply into kitchens and cocktail decks. Taulissa, SEEN by Olivier, Le Meridien, Farago and Calade take direct or hotel reservations and serve a real dinner; book Taulissa's terrace and a sunset slot at SEEN at least a week ahead in summer. Most are warmer-months venues that peak from May to September, and the cocktail-only roofs such as Rooftop 17 are for a drink, not a meal.
