That is the trade a chef's table asks you to make: you give up the corner banquette and the view, and you get a place inside the cooking instead. Las Vegas spent decades selling the spectacle of the room. The five counters below sell the spectacle of the pass, and they are ranked on the craft across it, the conversation at it, and what the seat costs against what it returns.

é by José Andrés hides behind Jaleo inside The Cosmopolitan at 3708 Las Vegas Boulevard, and it is the purest chef's table in the city: a single counter of twelve seats, two timed seatings a night at 5:30 and 8:30, where the kitchen sends out twenty-odd avant-garde courses built on Andrés' elBulli training. Liquid-nitrogen work, the puffed-bread bites, a procession plated and explained an arm's length away. The ticket runs about 250 dollars before drinks, which for this format is the value surprise of the list. It carries a Forbes Travel Guide Five-Star rating, and tickets release roughly three months out and clear fast. Buy the moment the window opens.

2.Restaurant Guy Savoy

Restaurant Guy Savoy sits on the Augustus Tower terrace of Caesars Palace at 3570 Las Vegas Boulevard, the only American outpost of the Paris three-star. The headline seat is the Krug Chef's Table, a private room beside the working kitchen with its own glassed view and a long menu poured alongside Krug Champagne. The dining-room tasting is 455 dollars, or 755 with the wine pairing, and the artichoke and black truffle soup with its toasted brioche, plus the Colors of Caviar, are the signatures to insist on. It holds AAA Five Diamond status. The Krug table books directly with the restaurant and climbs well past the standard tasting once the Champagne is counted, which is the point. 3.Yui Edomae Sushi

Yui Edomae Sushi puts eight seats at a hinoki cypress counter in a plain Chinatown strip at 3460 Arville Street, well off the Boulevard, and it is the most intimate chef's table on this list. Chef Gen Mizoguchi trained at Tokyo's Sushi Kanesaka and runs a strict Edomae omakase, curing and ageing fish flown in daily and brushing each piece of nigiri with nikiri before passing it across to your hand, with A5 Kagoshima wagyu among the supporting courses. The omakase lands between 300 and 400 dollars, sake extra. With only eight seats and no Strip address to lean on, it sells out first. Sit, trust the chef, and order the full omakase.

4.L'Atelier de Joël Robuchon

L'Atelier de Joël Robuchon runs the length of an open kitchen at the MGM Grand, 3799 Las Vegas Boulevard, in red and black lacquer, every seat facing the pass. It is the most accessible counter here on price: a table d'hôte at 125 dollars for four courses, a discovery menu at 205 for ten, and à la carte beyond. The Robuchon canon is intact, the silken pommes purée, le caviar, and la langoustine in a crisp brik pastry, plated by a brigade you watch the whole night. It keeps a Forbes Travel Guide Five-Star rating next to the formal Joël Robuchon dining room across the corridor. For a solo diner who wants the show without the 500-dollar ticket, this is the seat. Sit at the counter and take the discovery menu.

5.Mizumi

Japanese · Wynn Las Vegas · Forbes Five-Star

Mizumi at Wynn Las Vegas, 3131 Las Vegas Boulevard, keeps a handful of teppanyaki tables beside its koi pond and private waterfall garden, and that iron counter is the most literal chef interaction in town: one cook, your table, the whole meal built on the griddle in front of you. The teppanyaki menus run 108 to 255 dollars by protein, climbing with A5 wagyu, and there is a sushi counter and an omakase for the same room. It holds a Forbes Travel Guide Five-Star rating. This is the gentlest entry on the list, the chef's table for someone trying the format for the first time rather than chasing a tasting-menu marathon. Request a teppanyaki seat, not a dining-room table.

Avoid for a chef's table

Right city, wrong format

Joël Robuchon at the MGM Grand. The grandest room in Las Vegas and the only restaurant the city ever to hold three Michelin stars, in the 2008 and 2009 guides, with a 525-dollar dégustation and the famous pommes purée. But it is a formal sixteen-table dining room with a private salon, not a counter, so there is no pass-side interaction. Book it for the dégustation and the salon, not for a chef's table; for that, cross the corridor to L'Atelier above.

Twist by Pierre Gagnaire. Gagnaire's contemporary French room on the 23rd floor of the Waldorf Astoria is a beautiful window-table experience with one of the best Strip views, but the kitchen is closed off and the draw is the panorama, not the pass. Book it for the view and the cooking, not for chef interaction.

A note on stars. Several Las Vegas lists still advertise Michelin stars. Michelin has not published a Las Vegas guide since 2009, so any current star claim is stale; the new Southwest selection arrives in 2026. We rank on AAA, Forbes and our own assessment until then.

How to land one of these seats

The counters are small, so timing beats luck and the mechanics differ by room. é sells timed tickets about three months out and clears fast, so set a reminder and buy the minute the window opens. Yui Edomae has only eight seats and no Strip foot traffic to dilute demand, which makes it the hardest table here; book directly and early. The Krug Chef's Table at Guy Savoy is a single private room arranged on the phone with the restaurant, not online. L'Atelier and Mizumi keep weekday counter seats available closer in, the back door if you missed the rush, and a weekday everywhere buys a calmer pass and more of the chef's attention. Avoid convention weeks and major fight nights, when every premium seat in town tightens and prices firm. Send any dietary requirement when you book, because a set omakase or tasting is built in advance and cannot pivot once service starts.
