Bali sells the sunset, not the solo seat. The island's dining map is drawn for couples and clusters: cliff-edge beach clubs, sharing-plate terraces, the long table at the villa. A diner alone can feel like the booking that never filled. It does not have to. Bali also runs one of Asia's densest counter scenes, and Ubud and Canggu now hold a cluster of chef's counters and omakase bars where eating by yourself is the design rather than the apology. These six, ranked, are where a table for one is the best seat in the house — an 11-seat Edomae counter in Canggu, the fermentation-driven kitchen pass at Locavore NXT, a Ginza sushi master in the Sayan jungle, and a dessert bar that takes walk-ups.
1.SHUN Omakase Counter

SHUN reopened in 2025 inside the Komu Hotel in Berawa, Canggu, and chef Mark Jeremie Oliver runs it as an 11-seat omakase counter with two seatings a night, at 6:30 and 8:30. The format is the whole argument for eating alone: a single diner sits at the counter and is handed each of 13 to 18 Edomae courses as it is cut, blending classic Tokyo technique with Balinese-sourced fish. There is no dining room to be parked in and no two-top minimum — the counter is the room, and the solo cover is its natural shape. 2.Locavore NXT

Locavore NXT is the next-generation home of Eelke Plasmeijer and Ray Adriansyah's celebrated Ubud kitchen, ranked No. 44 on Asia's 50 Best Restaurants 2026 and winner of the group's Sustainable Restaurant Award in 2025. The 13-to-15-course tasting is set, with no à la carte, built almost entirely from Indonesian produce and the restaurant's own fermentation lab, rooftop food forest and mushroom chamber. It is a destination tasting rather than a stand-up bar, but a solo diner who books a counter seat sits inside the operation, watching the pass course by course; expect around IDR 1,950,000 per person.

3.Syrco BASÈ

Dutch-Indonesian chef Syrco Bakker, who earned two Michelin stars at Pure C in the Netherlands, opened Syrco BASÈ in Ubud in 2024, and its KU Culinary Atelier is a 12-seat chef's counter set apart from the main room. Diners move from a lounge to the counter for an 11-course journey that reads Indonesian heritage through a modern lens — traceable produce, house ferments, precise technique. For a solo cover the counter is the point: you sit with the team working in front of you rather than across a table from an empty chair. The full counter experience, with Krug and pairings, runs around IDR 4,500,000.

4.Hakkoku Bali

Hakkoku is the Bali outpost of the Ginza sushi room founded by Hiroyuki Sato in Tokyo in 2018, set on a U-shaped counter for six or seven guests at The Sayan House above the Ayung valley in Ubud. The dinner is a 20-piece Edomae nigiri course at IDR 1.8 million, the lunch a 15-piece course nearer IDR 1.3 million, each piece cut and served in front of you from the day's selection. The small counter and the single-cover rhythm make it one of the most natural solo seats in Ubud; it is listed in the Indonesia Gourmet Guide 2025/2026. 5.Room4Dessert
Will Goldfarb's dessert-and-savoury tasting with a cocktail-bar counter — Ubud's most fun solo seat from IDR 1,090,000. Walk up to the bar.
Will Goldfarb — alumnus of elBulli and Tetsuya's, and the pastry chef behind Netflix's Chef's Table: Pastry — runs Room4Dessert with his wife Maria in Sanggingan, Ubud. The signature is a long tasting that runs through savoury snacks into a procession of inventive desserts, around 21 courses, from IDR 1,090,000 unpaired up to about IDR 1,890,000 with natural-wine pairing. For a solo diner it is the loosest and most welcoming seat on this list: take a stool at the cocktail bar, order à la carte desserts or the full menu, and it never feels like a table built for two. 6.Mauri
Maurizio Bombini's 5-seat chef counter over Mauri's live kitchen — Seminyak's one Puglian solo seat, house-made pasta. Book the counter.
Chef Maurizio Bombini opened Mauri on Jalan Petitenget in Seminyak in November 2018, cooking the Southern Italian food of his native Puglia. The ground-floor room seats around forty facing an open kitchen, but the seat for a solo diner is the intimate five-stool chef's counter set up for private tastings, where Bombini and his team plate in front of you. The cooking keeps ingredients pure and Pugliese — house-made orecchiette and pasta, Adriatic-style seafood, burrata flown in spirit if not in fact from the heel of Italy. It is the one serious counter in the southern beach belt, and a single cover at the pass is looked after rather than parked.

Sundara. The Four Seasons beachfront club at Jimbaran Bay is one of Bali's great sunset rooms, built around daybeds, a pool deck and two-tops facing the water. A solo diner pays the view-and-scene premium for a format designed for couples and groups, with no counter to fall back on. Bring company at golden hour, or take the solo evening to a chef's counter in Ubud.
Cuca. The Jimbaran tapas room is one of the island's most inventive kitchens, but the whole menu is built on shared small plates meant to be grazed across a table of several. A single cover cannot work the spread the format is designed for and pays for dishes pitched at a group. Come with others, not alone.
Reservation strategy for solo dining in Bali
Bali splits by area, and the traffic decides everything. Four of these six rooms sit in or around Ubud — Locavore NXT, Syrco BASÈ, Hakkoku in Sayan and Room4Dessert in Sanggingan — so a solo diner basing a night in Ubud can cluster them rather than fight the hours-long crawl down to the south. SHUN is in Berawa, Canggu, and Mauri is in Seminyak, both better paired with a beach-belt stay. The omakase counters run on fixed seatings: SHUN seats at 6:30 and 8:30, Hakkoku takes a deposit to hold the stool, and both want a single seat booked days ahead.
The two tasting destinations, Locavore NXT and Syrco BASÈ, book weeks out online, and a single counter seat is usually the last to go when pairs have picked the calendar clean — so a solo diner can often land a seat a couple could not. Room4Dessert is the flexible one: walk up to the cocktail bar for desserts, or book the full tasting a few days ahead.
