The Restaurant

Mauri opened in 2018 at Jalan Petitenget No. 100 — the senior dining street that runs north from Seminyak's Eat Street into Kerobokan — under chef-patron Maurizio Bombini, a Pugliese-born veteran of Italian fine-dining kitchens across Europe and Asia who had been Bali's executive Italian chef at the Bvlgari Resort and Mandapa before opening under his own name. The two-storey room, named after Bombini's childhood nickname, holds forty seats on the ground floor facing an open live kitchen and a five-seat chef's counter on the mezzanine for the intimate evening tasting. The interior reads as a quiet contemporary Italian villa rather than a beach-island restaurant: pale travertine, dark walnut, a hand-laid Pugliese mosaic floor, and a wine wall running the length of the south side.

The kitchen runs two formats — an à la carte menu of about a dozen seasonal plates and a seven- or nine-course tasting that Bombini paces from the live kitchen. A large part of the ingredients are produced in-house in the rooftop hydroponic garden that sits over the second floor and supplies the restaurant's daily greens, herbs, and seasonal vegetables; the balance comes directly from named Balinese farmers Bombini has worked with for years. Signatures include the hand-pulled burrata that Mauri makes in-house every morning, the cavatelli with ragù bianco of Bali pork, a Pugliese-style orecchiette with cime di rapa and anchovy, a slow-braised Wagyu cheek with red wine reduction, and a hazelnut semifreddo that has been on the menu since opening.

The wine list runs to about three hundred and fifty labels with deliberate Italian regional depth — Barolo, Brunello, Etna Rosso, Friulano, Trentino — and includes a careful selection of older vintages that the sommelier will walk a guest through on request. The chef's counter format on the mezzanine, where Bombini paces the tasting himself, has become Bali's standing once-an-occasion Italian seat. Mauri has held the Best Italian Restaurant Bali award at the Awards every year since 2019 and is on the World's 50 Best Discovery list.
