Palais de Mahé is a 20-room heritage hotel on Rue de Bussy, opened in 2012 as part of CGH Earth's broader Pondicherry portfolio, and its rooftop restaurant has become the White Quarter's signature above-the-rooftop evening. The property was built as a French colonial administrative residence and the CGH Earth restoration preserved the building's proportions while adding the rooftop terrace that makes the restaurant distinct from its peers at ground level.

The menu is modern Creole with a seafood emphasis — mahi-mahi from the Coromandel Coast, Karikal prawns, a Pondicherry crab that is pre-ordered from the fishermen at the Kalapet market. The cooking is French-trained with confident use of the Tamil aromatics — curry leaf, mustard seed, asafoetida — and the signature dishes include a prawn étouffée with coconut, a grilled mahi-mahi with a roasted tamarind butter, and a rice course that the kitchen makes with Tamil-hand-pounded rice rather than the commercial basmati that most Indian restaurants default to.

The rooftop terrace is the principal dining space during the October–March cool season; the ground-floor dining room operates year-round. The staff are CGH Earth trained, which is visible in the pacing and the precision of the service.
