The Verdict
Pino has operated in Medina for several years and is widely regarded as the most technically rigorous Italian kitchen in the city. The pizza programme — the centre of the menu — follows Napoli convention with unusual discipline: double-fermented dough rested for 72 hours, imported San Marzano tomatoes, imported Fior di Latte and Buffalo mozzarella, wood-fired ovens operating at traditional temperatures, and a cook time measured in seconds rather than minutes. The pizzaiolo holds certification from the Associazione Verace Pizza Napoletana and treats it as a working standard rather than a wall decoration.
Beyond pizza the kitchen runs a credible pasta programme — cacio e pepe executed correctly, carbonara without cream, lasagna al forno finished à la minute — and a short list of secondi including braised veal osso buco and a grilled branzino with caper and lemon. The dessert menu keeps to the essentials: tiramisu, cannoli, panna cotta. The wine list is, of course, a mocktail list — here built around Italian aperitivo conventions reimagined non-alcoholically, including a surprisingly convincing Negroni sbagliato analogue.
The dining room is small, informal, populated as often by Medina families as by pilgrim couples who have discovered the kitchen through word of mouth. The staff are primarily Italian or Italian-trained and conduct service in a register lighter than the typical Medina hotel restaurant — a welcome shift in a city where most dining operates with a certain ceremonial weight.
Why It Works for Team Dinner
Pino is the most obvious Team Dinner choice in Medina — the pizza format accommodates dietary preferences easily, the price point is lower than the tower hotels, and the atmosphere is explicitly informal. For First Date dining it works equally well for couples who want good food without the ceremony of a hotel restaurant.
