About Sa Clastra

Castell Son Claret is a nineteenth-century finca at the foot of the Serra de Tramuntana, in the village of Es Capdellà — a landscape of ancient olive groves, dry stone walls, and the particular quality of light that the mountains produce in the afternoon, when the sun descends behind them and the sky becomes a palette of amber and rose. Sa Clastra, the hotel's Michelin-starred restaurant, sits within this estate as if it were always meant to be there.

Chef Jordi Cantó arrived at Sa Clastra with a specific idea: that the restaurant's cuisine should be structured around the winds that blow across Mallorca. The Tramuntana from the north. The Gregal from the northeast. The Mitjorn from the south. The Ponent from the west. The Mistral, the Llebeig, the Xaloc. Each wind shapes the island differently — its agriculture, its fishing, its microclimates, the temperament of the people who live under it. The Wind and Memory menu uses this geography as a narrative framework for a cuisine rooted in Mallorca's culinary heritage, reinterpreted through a contemporary lens.

The ingredients come almost entirely from the estate and its network of trusted local producers. The kitchen garden within Castell Son Claret supplies herbs, leaves, and vegetables throughout the growing season. The estate's own olive oil appears in several preparations. Wild game from the Mallorcan interior features in autumn and winter. The result is a menu that changes genuinely with the season rather than rotating around a fixed centre.

The dining room opens onto the estate's gardens and the mountain view beyond. On warm evenings, service begins with aperitifs on the terrace, where the light is extraordinary and the estate's stone architecture provides a backdrop that no purpose-built restaurant could construct. The full menu runs to twelve to fourteen courses depending on the season. A shorter format is available for those who prefer a less extended commitment. Both are exceptional.

Sa Clastra proposes something before you do. The drive through the Tramuntana foothills to Castell Son Claret — along roads lined with ancient olive trees, past dry stone fincas, through villages where time appears to have made a different arrangement with progress — creates a journey that is already an event. By the time you arrive at the estate gates and the hotel's architecture comes into view, whatever you are about to ask seems both inevitable and right.

The estate team are experienced with celebrations of significance and will work with you in advance to arrange whatever the moment requires: a particular table, a specific wine, a dessert course that departs from the standard menu. Request the terrace table for the aperitif hour before dinner — the Tramuntana mountains in the dusk light, with the estate gardens in the foreground, provide a setting that is difficult to surpass anywhere in Spain.

The Wind and Memory menu, structured around Mallorca's winds, gives the evening its own internal logic: a journey through the island's character that serves as an implicit argument for why being here, with this person, matters. For those who want the most considered proposal dinner in the Balearic Islands, Sa Clastra is the answer. For the most dramatic, with the widest views, Béns d'Avall on the Sóller cliffs remains the alternative.
