About Voro

There is a moment in the Devoro tasting menu — the 21-course version that Álvaro Salazar describes as following the arc of a Mediterranean day from dawn through zenith to sunset — when the food stops being impressive and starts being moving. It is not the technique, which is formidable. It is not the ingredients, which are superb. It is the coherence: the sense that every dish is speaking the same language and building toward something that you cannot quite see until you are already there.

Voro sits inside Cap Vermell Grand Hotel on the Canyamel coast, built in the style of a Mallorcan village, with high ceilings and light that changes colour as the afternoon passes. The dining room is deliberately understated — stone and linen and the soft sound of the sea — because Álvaro Salazar has never wanted the décor to compete with the food. He is right to insist on it. The food is extraordinary.

Salazar grew up in Linares, Jaén, and spent years in Barcelona and Madrid before landing in Mallorca and finding his voice. His Mallorcan period has been the making of him: the island's produce — its wild herbs, its almond and olive groves, its small fishing ports — gave him a lexicon to work in that he did not have before. The Voro menu moves through his autobiography: references to Jaén olive oil, to Barcelona technique, to Mallorcan landscape, to the Mediterranean itself as the unifying subject of everything.

The shorter Voro menu (16 courses) covers most of the same territory with slightly less ceremony. Both menus evolve seasonally and rotate signature dishes with new compositions. The wine list runs to 300 references with particular depth in Spanish naturals and Balearic producers. Service is warm, precise, and entirely without the stiffness that afflicts lesser Michelin tables.

This is the finest meal in the Balearic Islands. It may be the finest meal in Spain east of Barcelona. Book as early as possible.

Best for Impressing Clients

Voro is the only table in Mallorca that requires no explanation. Two Michelin stars in a five-star hotel on the northeast coast of a Mediterranean island: the setting alone signals a level of intentionality and taste that makes an immediate impression. The drive through the Canyamel valley to Cap Vermell — a hotel complex designed to resemble a hill village, with its towers visible from the sea — is part of the experience. Before a single dish arrives, you have already communicated something about how you approach things.

The menu does the rest. The Devoro format — 21 courses structured around the journey of a Mediterranean day — gives a long dinner a narrative quality that keeps the conversation moving between courses while the food provides enough to discuss on its own terms. The wine pairings, which draw heavily on Spanish naturals and Mallorcan bottles, are an education in themselves and give the sommelier a role in the evening that clients with any interest in food will remember.

For the most important meetings, reserve the private dining room, which seats eight and removes the ambient noise of the main dining room entirely. For slightly smaller parties, the corner tables with terrace views of the Canyamel coast are the most coveted seats in the house.
