About Es Fum

There is a point on the terrace at Es Fum — some time between the fourth and fifth course of the tasting menu, with the Mediterranean lying below in the last of the evening light — where the meal stops being a culinary exercise and becomes something closer to meditation. The view is partly responsible. The southwest coast of Mallorca, with the Tramuntana mountains behind and the open sea ahead, does something to the appetite and the mood that no interior room can replicate. Chef Miguel Navarro is sensible enough to build menus that match it.

Es Fum has held one Michelin star since 2011, making it one of the most consistently recognised restaurants on the island. Located within the St. Regis Mardavall Mallorca Resort at Costa d'en Blanes, it operates with the resources of a five-star hotel kitchen: exceptional produce procurement, an extensive cellar, the kind of service infrastructure that most standalone restaurants cannot afford. Navarro — originally from La Gomera, trained across Italy, Germany, San Sebastián, and Girona — uses these resources with precision.

His two menus, Origen and Recorrido, represent different relationships with the material. Origen anchors in signatures — the Hamachi Es Fum with its delicate smoke, the creamy Mediterranean red prawn rice that has become something of a calling card — dishes that have defined the restaurant's reputation and continue to justify it. Recorrido introduces new compositions, shaped by the chef's most recent travel and seasonal discovery. Both are available in 6, 8, or 10-course configurations. A vegetarian menu runs in parallel.

The dining room itself is sculpted stone and linen, with sculpture integrated into the terrace design in a way that references the island's artistic heritage without straining after cultural relevance. The cellar runs to 300 references with particular attention to Spanish naturals and Balearic producers whose bottles complement the terroir-driven cooking. A meal here lasts approximately three hours — exactly the right amount of time for the occasion to complete itself.
