About Nudo

Nudo sits on the shore of Es Figueral, in the quieter north-east of Ibiza, where an ageing beach bar has been taken over and gently polished into a proper kitchen. It is run by three friends — Jessica Natali, Edoardo Fiaschi and José Carlos Conde — who met cooking in the kitchen at Noma in Copenhagen and carried that pedigree to a stretch of sand far from the island's club strip.

The cooking is a Mediterranean kitchen enlivened with hints of Mexico and Japan, by way of Italy, Guatemala and the Nordics. The menu is in constant flow, reworked roughly every two weeks around what the boats land and the season offers, and the restaurant opens for lunch only — Wednesday to Saturday, one to four in the afternoon.

The Kitchen

The plates are creative Mediterranean seafood with a global accent: BBQ squid glazed with beetroot and paprika, langoustine with fermented plantain and morita chilli oil, and fresh taglioni with clams, kimchi and soft herbs. Mainstays run to juicy red shrimp, natural oysters and a whole fish of the day chosen each morning on the catch, with home-made pasta that shifts with what is available.

The Noma training shows in the ferment-and-technique edges rather than in fuss — kombucha brewed in-house, natural wines specially chosen from around the world, and a kitchen that reworks its menu every couple of weeks. This is cooking with ideas, served barefoot-casual by the sea.

The Room

The setting is pared-back and beach-bound: teak, sand and sea rather than white tablecloths, on a quiet cove away from the island's busier beach clubs. It keeps the polish of the cooking and drops the pretension of the room, which is much of the appeal.

Because Nudo opens for lunch only, Wednesday to Saturday from one to four, the rhythm is a long, slow afternoon rather than a dinner service. Tables are limited and the place has a following, so booking ahead is essential in season.
