The pedigree is the first thing critics reach for when writing about Casa Jondal: Chef Rafael Zafra trained under Ferran Adrià at El Bulli, spent years absorbing the methodology of the world's most consequential kitchen, and then brought that precision to a beach restaurant on the Balearic coast. This sounds like biography. At Casa Jondal, it becomes the meal itself.

The restaurant sits directly on the beach at Cala Jondal, one of Ibiza's most protected and beautiful coves. White pebbles, transparent water, the calm that the island's south coast preserves from the season's noise. The setting is extraordinary, and the kitchen knows better than to compete with it. Casa Jondal's approach is restraint: take the finest Balearic seafood available that morning and intervene only as much as necessary. It is a more difficult philosophy than it sounds.

The caviar dishes are a signature — an impressive selection that uses this most rarefied ingredient across multiple preparations: raw, grilled, cured, fried, with accompaniments that amplify rather than mask. The daily whole fish — whatever arrived from the island's fishermen that morning — is grilled over coals and served with olive oil and the briefest suggestion of lemon. It tastes like the definition of what fish should taste like. The seafood is incomparably fresh because it cannot be otherwise: at this price point, in this setting, with this chef's reputation, mediocrity would be a different kind of crime.
