The room occupies a generous space on the hotel's upper floors: clean-lined contemporary Korean design, dark wood, and the kind of carefully managed lighting that allows a meal to stretch from early evening into the night without the sense of being rushed.

The kitchen serves contemporary Korean with global technique — the menu shifts with the seasons, always anchored by Jeolla Province's extraordinary agricultural output. Gwangju sits at the heart of South Korea's most fertile food region; the produce arriving from the surrounding countryside is exceptional. Seasonal namul (seasoned vegetables), Jeolla-style doenjang-jjigae, braised galbi, and hanjeongsik (full Korean table d'hôte) are the room's foundation. The kitchen also runs a Western set-menu format for guests who prefer that structure.

The wine list is The Dining's most unexpected asset. For a mid-sized city like Gwangju, the representation of French, Italian, and New World wines is unusually serious — a reflection of the hotel's international clientele and the growing wine culture among Gwangju's professional class.
