Franceschetta 58 sits at Via Vignolese 58 on the eastern edge of the centro storico, in a converted auto workshop, and it is Massimo Bottura's casual counterpart to Osteria Francescana. The format is the point. Glasses by the pour and boards to share mean you build the evening as you go rather than sit through a procession, and the low light and book-lined walls make a small room feel private. Hosteria Giusti. The four-table room behind the centuries-old Giusti salumeria is iconic for its gnocco fritto, but it is lunch-only, books well ahead and offers almost no privacy across its tiny floor. A superb culinary stop, structurally wrong for a relaxed evening date.
