Thessaloniki has been Greece's kitchen for a century, fed by Asia Minor refugees who arrived in 1922 with cumin, soutzoukakia and a pastry case full of bougatsa. Athens got the Michelin stars first; this city got the cooking. That gap is closing on the record: UNESCO named Thessaloniki a Creative City of Gastronomy in 2021, and in December 2025 Michelin announced its guide expands here for 2026. The inspectors will find what locals already know. Five tables, ranked by what the night is for.

How Thessaloniki Eats

The day starts with bougatsa, warm phyllo filled with semolina custard or cheese, eaten standing before 10am, and it ends in a tsipouradiko, where each round of tsipouro arrives with its own plate of meze and the table orders rounds, not dishes. In between sits the salt: the Thermaic Gulf supplies the small fish that Mourga turns into a daily menu written after the morning market, and the Modiano Market, reopened in December 2022 after a five-year restoration with 117 stalls, supplies half the kitchens in the centre.

Eat on local time. Dinner before 21:00 marks you as a visitor; rooms fill from 21:30 and run past midnight, and a 22:00 reservation is unremarkable. Tipping is 5 to 10 per cent, with rounding up the everyday habit. Book the small rooms: Deka Trapezia means what its name says, ten tables, and To Vari Peponi is barely bigger. August is the trap month, when half the city's kitchens close for the islands.

Best Neighbourhoods for Dinner

Ladadika. The old oil-merchants' quarter by the port, now the densest restaurant and bar district in the city. Mourga cooks its market menu a short walk east.

The seafront, Nikis to the White Tower. The promenade carries the view tables; the Makedonia Palace's Salonika is its most polished room, and Deka Trapezia sits a block inland on Kallari.

Navarinou & the centre. Student-priced and late-running. To Vari Peponi on Apellou is the neighbourhood's best table, and Maître & Margarita dresses the centre up.

Ano Poli. The Ottoman upper town, where the old ouzeris do long lunches with a view over the bay.
