Suzuya — founded in the 1960s on Hanakawacho in central Takayama — is the reference hoba-yaki restaurant in the region and, for most first-time visitors to Takayama, the introduction to the city's signature dish. Hoba-yaki is the traditional Hida preparation of grilling Hida beef on a dried magnolia leaf (hoba) with locally-made miso paste — the leaf imparts a subtle smoke-and-earth note to the miso as it caramelises on the tabletop iron brazier, and the dish has been the symbol of Takayama regional cuisine for generations. Suzuya serves approximately 120 covers per lunch service and is typically full by noon in peak season.
