About Matsuki Sushi

Matsuki Sushi is an honest Edomae sushi counter in central Hida Takayama, a seven-minute walk from the station. Though the town sits deep in the mountains, it is close enough to Toyama and Kanazawa that fresh fish arrives daily, and the counter has long been one of our favourites in the Takayama guide.

The draw is twofold: properly worked Edomae nigiri and the local speciality, seared Hida beef pressed onto sushi rice. The Kitchen

Fish comes in by direct delivery from Toyama, Kanazawa, Nagoya and Hamamatsu, so the neta changes with the season. The signature is Hida beef nigiri, long slices of A5 beef lightly seared over rice, offered lean, medium-fat or premium at roughly 600, 800 and 1,000 yen a piece. The Room

The room is a small, traditional sushi-ya: a hinoki counter where the chef works face-to-face with guests, plus a few tables for groups. It runs quiet and welcoming rather than formal, with the chef happy to explain each piece, which makes it as comfortable for a solo diner as for a couple. Book ahead for the counter, especially in the evening.
