The Verdict

CHOC+ is the chef-driven modern European restaurant that anchors Suzhou's non-Chinese fine-dining ambition. Opened in 2021 by a team of chefs who previously cooked at The Bauer in Venice and at Noma in Copenhagen, the restaurant has operated from the beginning as a deliberate alternative to the hotel-dining model that dominates Suzhou's international cuisine scene. It is small, independent, and its menu rotates more aggressively than any other European-cuisine room in the city.

The cooking is modern European by technique but Jiangsu by pantry. A trout-and-caviar course uses fish from the same Taihu Lake suppliers that serve Song He Lou; a handmade pasta course is dressed with a sauce of fermented river shrimp; a venison course uses meat from a small farm in the mountains north of Suzhou. The tasting menu runs six or eight courses and changes roughly every six weeks.

The dining room is contemporary, exposed concrete, warm oak, minimal lighting, an open kitchen that the counter seats look directly into. The wine programme is unusually strong for the format, with a deep natural-wine list drawing from small Italian and Austrian producers. The restaurant operates a single evening service and the seats are nearly always full.

CHOC+ is consistently included in the Michelin Guide China Mainland's Suzhou selection. For many Shanghai-based food writers, it is the restaurant that makes the ninety-minute train trip to Suzhou worth it on its own, an unusual compliment for a city that the same writers otherwise regard as a weekend-gardens destination.
