About Pasha

Pasha occupies a corner of the Conversano castle square — a medieval hilltop town 30 kilometres south of Bari. The restaurant is run by the sibling team of Maria Cicorella (pastry) and Antonio Zaccardi (savoury), both trained under Enrico Bartolini. The Michelin star was awarded in 2019 and the cooking has continued to sharpen since.

The format is tasting-menu-led (four, six, or eight courses) with a kitchen voice that treats Apulian ingredients with contemporary-technical ambition: liquid-nitrogen herb powder, smoked emulsions, dishes assembled at the table. Signatures include a black-ink risotto with raw prawn and chamomile, and a lamb loin with Apulian bitter greens that has become the restaurant's calling card.

The dining room is contemporary-modernist — white walls, sculptural lighting, a centrepiece bronze installation — in deliberate contrast to the medieval castle outside. Tables are well-spaced and lighting flatters. For birthdays, Pasha will set up table decorations and coordinate a patissier-made cake with notice; Maria's pastry work is among the best in southern Italy.

Conversano itself is part of the evening: the castle square is floodlit after dark, the town is walkable, and arriving at Pasha on foot through the medieval streets gives the dinner its framing. Boutique hotels in the piazza offer a one-minute walk back after dinner.
