Valle d'Itria — the white-stone hill towns of Alberobello, Locorotondo, Martina Franca — holds the agriturismo fine-dining scene. Savelletri & Fasano on the Adriatic coast is masseria country: Borgo Egnazia, Torre Maizza, the luxury-hotel dining rooms.
