There is a moment, early in an evening at La Sponda, when the last of the ambient light leaves the bay and the restaurant is entirely candlelit. It takes staff over an hour to light the several hundred candles that illuminate the terrace, the archways, and the dining room of Le Sirenuse each evening. In that moment, with the Tyrrhenian dark below and Positano climbing the cliff above, walking into La Sponda feels less like entering a restaurant and more like entering a memory of what a restaurant should always be.

The hotel itself — a 1950s aristocratic family home converted by the Sersale family and never sold — is the most prestigious address on the Amalfi Coast. La Sponda is its dining room, and under chef Gennaro Russo it holds a Michelin star that is almost beside the point. The food is exceptional, but the food is not why people cross oceans to sit here.

Russo's menu is an expression of Campanian tradition at its most refined. Sea urchin linguine arrives with a restraint that lets the ingredient speak entirely for itself. Branzino is roasted whole and presented with local citrus and mountain herbs. The spaghetti alle vongole — clams from the bay, Amalfi white wine, a whisper of chilli — is a dish that resets your expectations of what pasta can be. Desserts lean on the coast's extraordinary citrus: lemon granita, sfogliatella that crumbles correctly, a tiramisu reworked with local limoncello.

The wine list covers Campanian producers with seriousness — Feudi di San Gregorio, Mastroberardino, De Conciliis — alongside the expected international depth. Service matches the setting: attentive, warm, and entirely without the stiffness that sometimes afflicts Michelin dining rooms at altitude.

The whole roasted branzino with Positano lemons and wild herbs from the hills above town is the seafood dish against which everything else on the coast is measured. The lemon semifreddo, made with fruit from the hotel's own garden, is a dessert that arrives as a reminder of exactly where you are.
