Signature dishes include the 28-day dry-aged rib-eye with smoked sea salt and seasonal vegetables; a salmon fillet grilled over Siberian birch with dill oil; a beetroot and goat cheese salad that has been on the menu for years; and a honey-glazed duck breast with Kazakh steppe herbs. The menu also carries several traditional Kazakh dishes prepared at a higher technical register than the folkloric restaurants — the beshbarmak here, in particular, is genuinely good.
