The kitchen operates in the international fine-dining register rather than a specifically Kazakh programme — modern European technique with a pan-Asian accent, calibrated for a diplomatic and corporate clientele that rotates through Astana for bilateral meetings and conferences. Signature dishes include a lobster bisque finished with coconut and lemongrass; beef tenderloin served on a bone-marrow crust with truffle reduction; black cod with saikyo miso; a duck course with pomegranate reduction that quietly references the region.
