The Room
Metronome opened on Jupiter Street in Bel-Air, Makati in 2019. Miko Calo — Manila-born, NYC-trained pastry chef and former head pastry chef at multiple Asia's-50-Best dining rooms — built the restaurant as her first solo savoury-and-sweet project. The dining room seats 50 across the main floor and a small chef's bar.
Service is small-team and floor-warm. Calo is in the kitchen every service. The booking window is two to three weeks for weekend evenings.
The Food
The kitchen runs a tasting menu that rotates monthly and pulls from Calo's pastry-trained precision and modern-French discipline. The bread programme (Calo's pâtisserie heritage) is the kitchen's signature warmup; the dessert progression is the close.
Wine programme is small and well-chosen — French-natural with Filipino-natural inclusions. The cocktail programme runs aperitivi-led.
Best Occasion Fit
First Date: Metronome's small dining room is the Makati first-date for the diner who wants the night to register as chef-driven-modern-French. The bread programme is the icebreaker.
