The Verdict

The Chameleon Room is a 14-cover chef's tasting restaurant inside a restored Heeren Street shophouse, opened in 2020 by chef Jimmy Lim (formerly of Tatler Asia's 10 Best Malaysia and a stage at Noma). The dining room runs single-seating across the room, every diner sits at the marble counter directly in front of the open kitchen, and Lim and one sous chef cook the entire meal in front of the diner over a four-hour service.

The 12-course Modern Malaysian tasting menu (RM 580 per person, approximately USD 125) is the only offering. The menu rotates monthly but always includes a small set of signatures: the otak-otak ravioli (the chef's modernist take on the Malacca riverside snack); the rendang-glazed wagyu cheek (slow-cooked 36 hours, glazed with a 4-day reduction of the rendang sauce); the chap chye consommé (the Peranakan stew rendered as a clear broth with pickled mustard greens); and the gula melaka soufflé that closes every meal.

The room is BYOB-friendly with no corkage fee, the chef will pair from the diner's own bottles. Service is in English. Bookings open 60 days in advance; the room is single-seating only (no walk-ins, no à la carte) and the experience runs 4 hours from 7pm to 11pm.

Impressing a client at The Chameleon Room works on the strength of the format alone: 14 covers, single-seating, the chef cooking in front of you for four hours. Few restaurants anywhere in Malaysia operate at this level of intimacy, and the Modern Malaysian register (rendang-glazed wagyu, gula melaka soufflé) signals to a visiting executive that you know the country's cuisine well enough to pick the modernist room rather than the safe Peranakan default.
