Zalacaín opened in 1973 and became the first restaurant in Spain to earn three Michelin stars — a milestone that changed how Spain thought about its own cuisine. After a hiatus and ownership change, the restaurant has returned under the Urrechu family with a commitment to preserving its legacy while giving the kitchen permission to evolve.

The cuisine occupies the territory between French classicism and Spanish tradition that defined European fine dining through the 1980s — a style that has returned to relevance as diners rediscover properly made sauces, correctly handled proteins, and food that aims for perfection within established forms.
