About Coque

Coque began as a roadside family house in Humanes de Madrid and arrived in Chamberí in 2017 with three brothers running it as a single organism: Mario Sandoval at the stoves, Rafael commanding the cellar, Diego running the floor. The wood fired oven made the move too; it has roasted the family's lacquered suckling pig for generations. Two Michelin stars and a Green Star, both confirmed in the 2026 guide, sit on top of a story no design studio could fake.

Dinner is an itinerary. You start with a cocktail, descend to a cellar of thousands of bottles, pass through the kitchen for a bite at the pass, and only then reach the dining room. The Menú Experiencia costs €450, the vegetarian version €325, and the full wine harmony takes the ticket to €810. The lacquered suckling pig, skin like glass over yielding meat, is the fixed point every menu revision has protected.

Mario Sandoval's research keeps the classicism honest: he has worked with Spanish research institutes on fermentation and egg techniques that surface quietly through the menu, and the Green Star reflects a garden and sourcing programme rather than a marketing line. Service, marshalled by his brothers, runs at palace standard without palace chill. Among Madrid's two star tables, Coque is the one built for occasions with weight behind them.

The Room

A sequence of spaces across more than a thousand square metres: cocktail bar, monumental cellar, open kitchen and finally a dining room of curved oak and quiet gold. Tables are large, distances generous, acoustics engineered for discretion. It is the rare restaurant where arriving early is part of the design. Jackets fit the room; the room does not demand them.

Is Coque worth it?

For a weighty occasion, yes. Two Michelin stars, a Green Star, and a format nobody else in Madrid attempts: cocktail bar, cellar, kitchen and dining room as one continuous show. At €450 before wine it prices at the very top of the city's two star field, which the value score acknowledges; experience density is what you are buying.

How hard is it to book Coque?

Easier than its theatre suggests. Weekends need two to three weeks through the restaurant's website; weeknights often hold inside one. The dining room is large and the private rooms add capacity. If the cellar tour matters to you, say so at booking and arrive fifteen minutes early.

What is the dress code at Coque?
