The Chef Who Put Cernobbio on the Map

When Davide Caranchini opened Materia on Via Cinque Giorni in Cernobbio in 2016, he was one of the youngest serious chefs in Italy — twenty-four years old, a native of the lake, returning from stages in London and Copenhagen with a head full of ideas and a philosophy of cooking that was at once deeply local and genuinely international. The tasting menu — the primary format here — moves through eight to twelve courses with a narrative logic that follows the lake through the seasons. Early spring brings Alpine herbs, mountain cheese, and the first lake fish of the year. Summer arrives in stone fruits, basil, and the deep-flavored perch and lavarello that the lake produces in quantity. Autumn delivers mushrooms, chestnuts, and the rich complexity of aged Valtellina cheeses. The wine pairings, assembled from a list weighted toward northern Italian producers, are consistently excellent.
