The signature dishes are unambiguously Uyghur. Laghman (¥30) — the hand-pulled noodle dish with the stir-fried lamb-and-vegetable sauce; the noodles stretched and cut by the cook in front of you. Manty Dumplings (¥20 for ten pieces) — the steamed lamb-and-onion dumplings, served with a small portion of vinegar-and-pepper sauce. Roasted Lamb (¥120 for a multi-portion plate) — the traditional Uyghur slow-roasted lamb served with rice and the standard Uyghur side accompaniments. A meal of three Uyghur classics for two diners runs ¥80-120.

The room is functional — thirty-six seats across a single ground-floor open dining hall, white-tiled walls, the open kitchen at the front of the shop where the laghman noodles are pulled in continuous batches, fluorescent lighting. Walk-ins always work outside Chinese-tourist peak weeks. Cash is preferred but cards are accepted; English picture menus are present and the staff speak basic functional English.

What makes Nurlan a strong cheap-eat choice is the recipe authenticity — the kitchen is genuinely Uyghur-family-operated, and the traditional dishes are made with the recipe-fidelity that the more tourist-tier Han Jia Chang competitor's larger-scale operation can't always maintain.

For team dinners with visiting colleagues, the cheap-eat format absorbs four to six.
