The Grillhouse Rosebank opened in 1994 inside The Firs - an upscale retail-and-hotel development at the corner of Oxford Road and Biermann Avenue in Rosebank, three minutes' walk from the Rosebank Gautrain station and at the structural centre of Johannesburg's northern-suburbs senior dining grid - and has remained the city's most-loved premium steakhouse for more than thirty years. The dining room seats approximately one hundred and eighty across a single grand-format main space with classical art-deco architecture: original 1930s-pattern terrazzo floors, banded mahogany wall paneling with deep-relief plaster work, deep-leather banquettes upholstered in burgundy and forest green, white-cloth tables with classical art-deco china and heavy stemware, and the room's signature feature - a long curved bar of polished mahogany and white marble that runs along the back of the dining room and seats twenty for a la carte dining. A separate private dining room off the main floor seats twenty-eight for senior corporate-host tables and is structurally the most-considered private dining venue in the broader Rosebank dining cluster.

The kitchen project under the Grillhouse Group - now operating three Johannesburg restaurants and four South African locations - is rigorously classical premium steakhouse with explicit Cape regional influence. The menu has remained structurally consistent across the restaurant's thirty-year run: the kitchen's signature spice-crusted fillet (a hand-cut prime rump preparation with a proprietary peppercorn-and-paprika spice crust); the saucy ribs (a slow-braised pork-rib preparation with a Cape-influenced tomato-and-molasses glaze that has been the kitchen's most-ordered starter since opening); a serious dry-age steak programme that runs primarily on the bone-in ribeye, the porterhouse and the T-bone; a properly-prepared steak tartare from hand-cut prime rump with classical garnish; a wood-grilled lamb T-bone with rosemary jus; and a daily-rotating fresh-fish programme that draws on the Cape Town and Mozambique inshore catch. The plating reads as classical without veering into the kind of avant-garde minimalism that doesn't sit well with the senior Johannesburg dining context.

The wine and single-malt programmes are the room's quiet structural advantage. The cellar runs approximately four hundred and twenty references with explicit depth in Stellenbosch and Franschhoek Cabernet Sauvignon (the senior single-vineyard Cabernet section runs five pages and includes mature vertical selections of Vergelegen V, Meerlust Rubicon, Kanonkop Paul Sauer, Rust en Vrede Estate, and the Boekenhoutskloof Cabernet Sauvignon), a serious Pinotage progression from the senior Cape estates, and a Champagne programme that supports the room's senior celebration register. The single-malt programme is the most considered on the African continent: approximately one hundred and sixty references with explicit depth across Speyside (twenty Macallan bottlings including the Sherry Oak vertical and the rare M Series), Highland (a complete Glenmorangie and Dalmore senior selection), Islay (a serious Lagavulin, Laphroaig and Bowmore progression), and a rotating limited-allocation selection that draws from the senior whisky-importer relationships across South Africa.
