About Indique Restaurant & Bar

Indique sits on the topmost terrace of Pal Haveli, an 18th-century heritage mansion run by the same Rajput family who built it, a short walk from the Clock Tower in Jodhpur's old city. The draw is the view: a near 360-degree sweep that takes in the floodlit Mehrangarh Fort, Umaid Bhawan Palace, Jaswant Thada and the Gulab Sagar lake below. Few rooms in Rajasthan put a meal under a more theatrical sky.

The terrace is divided in two. Indique itself occupies the highest level, looking out over the blue city's rooftops; Daudi, a former ladies' courtyard one level down, is now an open-air bar built for sundowners. The cooking is Rajasthani and North Indian with a handful of Continental and Chinese options, designed to suit the international guests the haveli draws.

The Kitchen

The kitchen plays to the region. Laal maas — fiery mutton cooked with Mathania red chillies — is the dish to order, alongside dal baati churma, the classic Rajasthani plate of baked wheat dumplings, lentils and sweet crumbled churma. Service is friendly and unhurried in the heritage-hotel manner, and the open-air setting means weather matters — the rooftop comes into its own from October through March, and a clear evening is worth planning around. The lower Daudi level is the spot for a drink before or after dinner.
