About Darikhana
Darikhana is the signature restaurant of RAAS Jodhpur — a luxury boutique hotel occupying a restored 18th-century haveli in the old town, a five-minute walk from Pal Haveli and directly below Mehrangarh Fort. The hotel opened in 2010 and was one of the first properties to combine strict heritage restoration with contemporary interior architecture at the luxury tier; the restaurant sits inside the original haveli's central courtyard.
The cooking is contemporary Indian with French technique and a deliberate focus on Rajasthani desert-ingredient sourcing. The smoked aubergine bharta is served under a glass cloche that captures the last smoke; a pepper-aged lamb raan (shoulder) is slow-cooked for fourteen hours and carved tableside; the saffron kulfi (frozen Indian dessert) uses Kashmiri saffron harvested specifically for the property. The menu changes seasonally and the chef, trained at the Taj's Jiva Spa Culinary program, rotates through both tasting and à la carte formats.
For closing a deal, Darikhana's back alcove — screened by a 19th-century jaali (carved-stone lattice panel) that the hotel restored from the original haveli — is Jodhpur's single most acoustically private dining space. The alcove seats up to six, has its own service, and is configured for confidential conversation in a way that no palace-hotel room matches. Booking the alcove requires advance notice and a modest minimum spend (INR 25,000 for the table).
The wine list is the best in Jodhpur — 80 labels with strong Indian producers (Sula, Grover Zampa, Fratelli) and a small but well-chosen French and Italian selection. The sommelier also runs a non-alcoholic pairing program built around Jodhpur dairy and desert-herb infusions; it is more articulate than most alcohol-pairings in the city.
