About Nine Skies
Nine Skies occupies a restored 1930s tea-planter's bungalow on the Demodara ridge, two kilometres from the Nine Arch Bridge. The hotel runs as a five-villa boutique — fourteen guests at full occupancy — and the dining room is correspondingly intimate: six tables under the original beamed ceiling, a single Colombo-trained chef, and a service brigade of four. It is Ella's smallest fine-dining room and its most personal.
The dining room opens onto the bungalow's front veranda and a lawn that runs to the ridge edge; dinner service in good weather is on the veranda. The cooking is colonial Ceylonese — the traditions of the British-era tea planters with a modern, lighter hand. Signatures include the Ceylon country captain chicken, the slow-braised jaffna-style lamb curry, the mulligatawny soup in the proper style, and the bungalow's house curd-and-kithul dessert. The kitchen will build around guest dietary requirements with 24 hours' notice.
The wine programme is modest but considered — about thirty bottles, weighted to Australian and Italian reds and Sri Lankan arrack. The bungalow's signature cocktail, the Nine Skies Old Fashioned (arrack, palm treacle, bitters), is poured on arrival.
Service is the hotel's strongest suit. The brigade has been with Nine Skies since opening, the interaction is unhurried and informed, and the dinner runs at the pace of the slowest table. Non-guests are welcome with 72 hours' notice but the six-table room books out two weeks ahead in season.

Nine Skies is Ella's proposal answer for the couple who want intimacy rather than spectacle. Six tables, personal service from a brigade who will know the menu choices and the champagne by name on arrival, and a 1930s bungalow veranda that makes an elopement dinner feel like a scene from a Merchant Ivory film. Book the full bungalow for a proposal weekend; book the veranda two-top for a single-evening visit. For an impress-clients evening where the brief is 'show me how you source', the chef's-kitchen-tour-plus-dinner is the order.
