About Marchal
Hôtel d’Angleterre has stood on Kongens Nytorv since 1755, which makes it one of the oldest continuously operating luxury hotels in the world. Marchal, the hotel’s flagship restaurant, carries that history lightly — the dining room is luminous and contemporary, with neoclassical architectural bones supporting a decidedly modern sensibility. The square opens outside the tall windows: trams, fountains, the nightly theatre of Copenhagen’s grandest public space. Inside, the atmosphere is hushed and theatrical in equal measure.
Head Chef Alexander Baert runs a kitchen that blends contemporary Nordic cuisine with classical French sensibility. This is not the New Nordic of ferments and foraged bark; it is cooking that respects tradition while demanding technical excellence. Danish turbot is steamed in Champagne and finished with elderflower beurre blanc — a dish that would not exist without both the French classical kitchen and the Nordic larder. Veal tartare arrives with tarragon and a compressed apple gelée that bridges France and Scandinavia in a single mouthful. The caviar selection is exceptional; the cheese trolley, drawn from French and Danish farmhouses, is one of the finest in Scandinavia.
The wine list is the most classically French in Copenhagen: Grand Cru Burgundy, vintage Champagne, and mature Bordeaux feature alongside a considered selection of Scandinavian and natural producers. The sommelier team is the most formally trained in the city — a product of the hotel’s long relationship with European hospitality tradition. For a lunch or dinner where the wine is part of the statement, Marchal is the right room.
The service is the most ceremonially accomplished in Copenhagen. Formally trained, white-gloved on request, and capable of adjusting pitch from celebratory to intimate to professional without perceptible effort. This is a dining room that knows it will be asked to host engagements, anniversaries, and board-level hospitality — and it has calibrated every element of the experience accordingly.
