About Kadeau

Every jar in the cellar points to one island. Kadeau began in 2007 as a beach restaurant on Bornholm, opened by Nicolai Nørregaard and his childhood friends, and the Copenhagen room followed in 2011 on Wildersgade in Christianshavn. In June 2026 the Nordic Michelin ceremony gave it a third star, making it the guide's newest member of the three star elite and vindicating two decades spent cooking one island's produce with total conviction.

The kitchen preserves all summer to cook all winter: tomatoes from last August, seaweeds, unripe berries, fig leaves, sea buckthorn and pine, fermented and cellared until they carry more of Bornholm in January than most kitchens manage in season. The tasting costs DKK 3,300, with a wine pairing at DKK 2,200 and a juice pairing at DKK 1,200 that is among the best in the Nordics. A Green Star recognises the sourcing that makes the whole system run.

What separates Kadeau from its three star peers is temperature, and not the kind in the kitchen. The room reads as a home: dark wood, wildflowers, an open kitchen without drama, service that talks about the island because most of the team has cooked or foraged there. Dinner runs Wednesday to Saturday and books out steadily since the ceremony, so plan weeks ahead rather than days.

The Room

Dark timber, soft light and dried flora from the island make the space feel closer to a summerhouse than a monument. The open kitchen sits level with the tables, and chefs serve courses themselves without ceremony. Sound stays warm rather than hushed. Dress is smart but relaxed; Christianshavn outside the windows does the rest.

    DKK 2,200, leaning natural and Nordic with sharp European picks. Trust it over the list unless you have a cellar agenda.

  4. Winter over summer

    Counterintuitive, but the preserving pantry shows deepest in the dark months, when the kitchen cooks entirely from what it saved. Summer is lovely; winter is the argument.

Not for: diners who want luxury signifiers, caviar, langoustine, gold leaf, on every plate. The luxury here is time and preservation, not trophy ingredients.

Questions diners ask

Is Kadeau worth it?

Yes, and June 2026 settled the argument: the third Michelin star put Kadeau alongside Geranium at the top of Denmark while it remains the warmer, more personal room of the two. At DKK 3,300 for the tasting it also undercuts most European three stars by a wide margin.

How hard is it to book Kadeau?

Harder since the third star, but not brutal. Dinner runs Wednesday to Saturday and tables release online; several weeks of lead time is enough for a weeknight, while Fridays and Saturdays now need more. Watch for returned tables midweek.

What is Kadeau's food actually like?

One island, preserved. Everything is from or inspired by Bornholm: seaweeds, unripe fruit, last summer's tomatoes, sea buckthorn, pine, all fermented, dried or cellared and then cooked with three star precision. Expect acidity, smoke and depth rather than caviar and butter.
