The Room
Bo Bech (formerly the chef-owner of the Michelin-starred Paustian) opened Geist on Kongens Nytorv in 2011 — a chef-driven minimalist-Danish dining room. The Michelin Copenhagen guide has assigned Geist a Recommended designation.
The dining room is intentionally minimalist: a long marble bar facing the open kitchen, banquettes along the eastern wall.
The Food
The menu runs modern-Danish with chef-driven minimalism. The seasonal-rotating preparations, the wood-grilled secondi, the chef's tasting at 895 DKK handle the menu's spine.
Wine programme is natural-Nordic. Cocktails are short and considered.
