Ever

“Curtis Duffy cooked three stars at Grace and two here since 2021. At $285 the polish outruns the price. Book it.”
About Ever
Curtis Duffy earned three stars at Grace, walked out in a 2017 ownership dispute, and answered with Ever in July 2020, opening a luxury tasting room into a pandemic and taking two stars in the first guide that could judge it. The story, told in the documentary For Grace and in his 2025 memoir Fireproof, hangs over the room without ever being mentioned in it. What you actually meet at 1340 West Fulton Street is one of the most controlled kitchens in America.
The menu runs eight to ten courses at $285 and moves with Duffy's signature precision: an opening of Uruguayan osetra caviar over Icelandic yogurt semifreddo with green garlic, seafood set in clear gels and shaved ice, proteins finished with sauces measured to the drop. Michelin's inspectors named a 2024 spring peas course one of their favourite dishes of the year, which tells you how seriously this kitchen takes vegetables. Nothing lands loud; everything lands exact.
Reservations release monthly on Tock at 9am Chicago time on the first Tuesday, covering dates two to three months out, and the dining room turns in about two and a half hours, brisk for the category. Two stars in every guide since 2021, the bar After next door for the bookend drink, and a ticket $135 below Smyth's make Ever the best value seat in Chicago's two star class. The Value score of seven is earned, not generous.
The Room
A windowless, serene space in soft greys and curved lines, engineered so nothing competes with the plates. Tables are widely spaced, acoustics stay low, and service under Duffy's longtime partner Michael Muser runs warm inside formal lines. Dress is smart; jackets are common but not demanded. The adjacent bar After takes the aperitif and the afterward.
Why book it, occasion by occasion
An evening here is an investment of hours as much as money. Spend them on these occasions.
For the client who notices execution
Some guests are impressed by noise; the dangerous ones are impressed by control. Ever is control: courses arriving on a metronome, sauces finished at the table, a room hushed enough that nobody repeats a number twice. The $285 ticket is prepaid on Tock so the bill never surfaces, and the two and a half hour pace respects a working calendar. Book the first Tuesday release, request a corner table, and let the caviar opening set the tone.
For the anniversary built on a comeback story
Ever is literally a restaurant about second acts, which makes it a quietly perfect anniversary room. The space is serene rather than showy, the lighting flatters, and the kitchen handles occasion notes from Tock with real grace, often marking the night on the dessert course. Take the wine pairing at the level you actually drink, not the level you want to signal. The bar After next door is the right place for the toast that starts or ends it.
For the close that needs calm, not theatre
Deals stall in loud rooms. Ever's windowless hush, wide table spacing and predictable two and a half hour arc make it the most controllable serious dinner in Fulton Market. Prepaid tickets remove the check dance entirely, and the fixed menu removes ordering negotiation. Tell the team the evening matters when you book; service will pace courses around the conversation instead of through it. Close at the table, then confirm it over one drink at After.
What to order
The tasting is fixed at $285, so your decisions are the pairing tier, the supplements when offered, and the bar plan next door.
- The caviar opening, undisturbed
Uruguayan osetra over yogurt semifreddo with green garlic. Resist conversation for one minute; it is the kitchen's thesis statement.
- The vegetable course of the season
Duffy's vegetable work, like the spring peas Michelin singled out in 2024, is where this kitchen quietly outcooks its rivals. Do not treat it as an interlude.
- The standard pairing over the reserve
The entry pairing is composed with the same care and keeps the evening near $450 a head instead of far past it.
- A seat at After, booked for afterward
The bar next door pours serious cocktails and rare bottles. Ending there turns a two and a half hour dinner into a complete evening.

Questions diners ask
How much does Ever cost?
The tasting is $285 per person before drinks, with tiered wine pairings on top. All seats are prepaid on Tock. With a mid tier pairing, tax and service, expect roughly $450 to $600 a head, noticeably under Chicago's other two star tickets and $135 below Smyth's base price.
How do Ever reservations work?
Tock releases a full month of dates at 9am Chicago time on the first Tuesday of each month, typically covering two to three months out. Prime Saturdays go within hours; weeknights linger. Set a calendar reminder for the release, and check back midweek for returned tables.
Is Ever as good as Grace was?
Different, and on most nights just as controlled. Duffy carried his precision, his caviar openings and his vegetable obsession from Grace into Ever, and Michelin has given it two stars in every guide since 2021. What changed is context: at $285 it is the most accessible cooking of his career.
What is the dress code at Ever?
Smart. The room is formal in bone structure but not in enforcement: jackets are common, ties are rare, and polished dark clothing fits best against the grey, windowless calm. Save the statement sneakers for the bar After next door, where the code relaxes considerably.
