About Alinea

Since opening in June 2005 in a converted Lincoln Park townhouse, Alinea has operated without a credible rival in American avant-garde dining. Grant Achatz — a Ferran Adrià protégé who survived throat cancer and continued cooking through chemotherapy — has built the most consistently boundary-testing restaurant in the country. The three Michelin stars arrived in 2010 and have never left.

Alinea currently offers three distinct dining experiences housed within the same address at 1723 North Halsted Street. The Salon — the most accessible format — seats approximately 22 guests at an intimate room and serves a focused tasting menu from $325 per person. The Gallery, Alinea's centrepiece experience at $395–$495 per person, transforms a private dining room into a theatrical environment where tables are cleared mid-meal and courses are served on a suspended, shared canvas. The Kitchen Table seats 8 guests in the kitchen itself for an entirely bespoke experience negotiated directly with the culinary team.

Tickets are purchased in advance through Tock — the system Achatz co-founded specifically to address the problem of no-shows at high-end restaurants. Dates sell out quickly. The Gallery experience on premium weekend evenings books out months in advance.

The Achatz Method

What makes Alinea singular is not any single technique — it is the philosophy that a meal should be experienced as an integrated composition rather than a sequence of plates. Courses are conceptually linked. Some dishes arrive as edible art: a helium balloon of taffy meant to be eaten whole, an intermezzo served on a block of ice, a dessert delivered directly onto the table's surface. Others are deliberately minimal — a single perfect ingredient, prepared with invisible technique, designed to provoke reflection rather than spectacle.

The wine program, helmed by sommelier Mark Mendez, is one of Chicago's finest. Wine pairings run $155–$395 and include both classical European benchmarks and unexpected natural selections. The cocktail pairing is equally considered for those who prefer spirits. Alinea's non-alcoholic beverage program — house-fermented kombucha, pressed juice compositions, and zero-proof cocktails — receives identical curatorial attention.
