Yu Bo trained for ten years in a state-owned Chengdu restaurant, spent the following decade developing his own approach to Sichuan cooking, and in 2006 opened Yu's Family Kitchen with his wife in a format that has no real equivalent anywhere in China. Six private rooms. One sitting per evening. A minimum of fifteen courses. No printed menu. The kitchen decides, based on the season, the market, and what Yu Bo believes the guests should experience. The restaurant has operated on these terms for nearly twenty years without compromise, which is as good a measure of its confidence as any critical recognition.
The tasting menu begins with sixteen cold dishes divided across four seasons by colour, taste, and ingredient, and the opening sequence alone. The precision of the presentation, the complexity of each preparation's flavour, the way the courses speak to each other. Establishes that something genuinely unusual is happening. Yu Bo's Sichuan cooking deploys the full vocabulary of the province's flavours. The ma la numbing heat, the vinegared brightness, the sweetness of preserved vegetables.
