About Fitzbillies
Fitzbillies has stood on Trumpington Street, near the Fitzwilliam Museum, since 1920, when brothers Ernest and Arthur Mason opened the bakery. Its fame rests on one thing: the Chelsea bun, made by hand to a secret recipe and slathered in bun syrup — more than 300,000 a year. After the business collapsed in 2011, food writer Tim Hayward and Alison Wright bought and revived it, prompted by a public lament from Stephen Fry.
Today it is bakery, café and Cambridge ritual at once, with a second branch on King's Parade looking onto King's College Chapel.
The Kitchen
The kitchen still bakes the original Chelsea bun to the hundred-year recipe — cinnamon and currants, sticky with syrup — alongside newer variations like a blueberry-cheesecake bun and a cinnamon bun with cream-cheese icing. The Room
