Göltürkbükü, Bodrum — Turkey

Twenty years of Michelin-grade Aegean cuisine beside the most storied cove on the Turkish Riviera — glamour and gastronomy in perfect proportion.

There is a particular alchemy that occurs when a great restaurant and a great location find each other. Maçakızı in Göltürkbükü is that alchemy made permanent. The hotel itself is one of Turkey's great coastal institutions — intimate, achingly stylish, and fiercely loyal to a vision of Turkish summer life at its most refined. The restaurant is its gastronomic expression, and has been for over two decades.

Chef Aret Sahakyan trained in French and Italian culinary traditions before arriving at Maçakızı, and the synthesis shows. His cuisine is rooted in classical technique but entirely oriented toward the Aegean: ingredients drawn from local producers and the hotel's own Maçakızı Culinary Gardens, prepared with the confidence of a kitchen that has had twenty years to perfect its repertoire. The slow-cooked octopus — its crispy crust contrasting with briny herbs, fried onion, and a tarhana sauce enriched with vegetable broth — has become one of Turkey's definitive modern dishes.

The service at Maçakızı is characterised by a warmth unusual at this price point: guests are known, remembered, and welcomed as though returning to a private home. The lunchtime open buffet, focused on simple Aegean dishes with olive oil, is a different but equally compelling experience from the dinner service. The wine list is one of the most serious in Turkey, with an exceptional champagne selection and deep coverage of both Turkish and European regions.

Göltürkbükü Bay as backdrop — calm, luminous, and perfectly curved — provides the setting that puts the cooking in context. Maçakızı understands what it is: a repository of Turkish summer at its most composed, available to anyone willing to secure a reservation in time.

Why it works for a Proposal

The mathematics of a proposal dinner are simple: the setting must be undeniable, the food must be outstanding, and the service must understand without being told that the evening is singular. Maçakızı satisfies all three conditions simultaneously. Göltürkbükü Bay catches the evening light in a way that is genuinely cinematic; the kitchen's tasting menu gives the meal a narrative arc; and the hotel's long experience of hosting significant moments is evident in every detail of how the evening is managed. For a proposal dinner on the Turkish coast, there is no serious rival.
