About Sait

Sait Birtan came home from more than twenty years in Sweden and opened a fish counter in Bodrum in 1993, and the formula has not changed since: a wall of ice, the day's catch laid out whole, and a terrace looking onto the water. Three decades on it is one of the names a Bodrum local gives when you ask where the fish is best, a verdict the Michelin Guide ratified when it reached the Aegean coast in 2024. There is a second branch at Galataport in Istanbul, but the Neyzen Tevfik room is the original.

The Kitchen

The kitchen is built around the counter. You choose your fish whole off the ice, it is weighed, and it comes back grilled or salt-baked with little between it and the plate. The signature is the seafood bulgur pilaf, the dish regulars order alongside the catch, and the meze table runs long with the cold Aegean classics; the seafood pasta is the other plate the room is known for.
